calling all recipes

I am requesting a teeny bit of help from everyone.  For Lent I gave up sandwiches (pause for reaction), and one week in it's a little harder than I anticipated.  So far so good, but I guess I didn't realize just how many sandwiches I actually eat. 

SO, what I am looking for are easy recipes of delicious things to eat that do not come in sandwich form (or wrap form.  Judge's ruling is that this is essentially the same thing as a sandwich).  Anything you can provide is appreciated!

Are tacos/burritos out? My quick dinner pick is usually a tortilla with beans, cheese, sour cream, and salsa. And green onion if I have it. Mmm....the old standby...

I remember making appetizers by spreading cream cheese onto a slice of ham and wrapping it around a stalk of green onion. It's not really fancy-pants and I'm sure there's a name for it....just a thought.

I'm late to this party, but I can't have bread or tortillas (no wheat or corn) so I have a bit of experience here.

I'm the big pasta fan. I can put stir fried veggies on pasta, or put whatever leftovers I have in tomato sauce with basil and oregano.

I'll toss it with olives and olive oil, sometimes nuts or seeds, and any veggies I have in the house or the freezer.

You can do the same thing with rice but rice takes longer. With pasta, you just pull together whatever goes on top of it, while it's boiling, and dinner's ready before you know it.

Or try chili, or other thickish soups (I think I remember Progresso has a good Lentil if you like that).

If you like refried beans, black beans or hummous, you can get crackers or quality tortilla chips. Either make "nachos" or just put the beans and any toppings you want in a low flat dish like a pie pan, and then dip it up.

Consider a baked/microwaved potato as a base. Put chili or veggies or salsa, cheese if you like it, whatever you've got, on the broken-open potato.

You could also do like my hubby did when he was single. He would make prep time minimal. He got bags of carrots and apples or oranges, and packed a few carrots and a fruit, and either a baggie of nuts or a hunk of good cheese, for lunch.

Or try filling celery with peanut butter... or do peanut butter and apples. And some days I make pancakes (mine are buckwheat) with ice cream and strawberries for any meal of the day.

Good thing I just had dinner or I'd be hungry by now...
